

This was my latest cook! A Gold Snake River Farms brisket cooked to absolute perfection! This particular wagyu brisket had a very high intramuscular fat content which, when rendered, becomes incredibly rich and flavorful. As I was trimming the excess fat from this cut, which would just burn and become acrid, the fat just melted from the heat of my hand!

Wagyu briskets are not for everyone. They tend to be very greasy from the rendered fat, but if you enjoy a full flavored experience this is definitely the way to go!
